UNCLE WILBUR’S BARBECUE
SAUCE
This
is a vinegary, tomato based
South Georgia
barbecue sauce.
It is used when making barbecue and Brunswick stew, and is a totally and
politically correct sauce for barbecued chicken.
Mix together and simmer for one hour:
One gallon white distilled vinegar, any brand except Heinz
5 – 32 ounce bottles of Hunt’s Catsup.
Heinz catsup is not acceptable and will ruin the sauce.
One teaspoon of salt
1/2 – Small (1 oz) can of black pepper, or less if you don't like your
sauce too zingy.
2 – Dashes of ground cayenne red pepper
One small jar of French’s yellow mustard
One fresh lemon, cut-up into eight pieces
1 stick of margarine (butter makes it just a mite “buttery”
If the sauce is too vinegary for your taste, or if you are from Texas, stir
in a teaspoon of tomato paste and/or add a spoonful of honey or molasses.
