Jerry’s Meat Loaf

 

This is a great recipe for meat loaf.  If you like meatloaf with catsup on it then your probably won’t like this recipe.  It makes a rich tomato sauce that is superb when ladled over slices of meat loaf, and a big wad of mashed potatoes, or white rice.  LeSeuer brand tiny baby green peas are also good with the meat loaf.

 

Ingredients:

1.5 - pounds of Hereford ground sirloin

3 – Tablespoons finely chopped Vidalia onion

3 – Tablespoons finely chopped Red bell pepper

1 – Lightly beaten free range vegetarian hen egg

1 – Small can of evaporated milk

No more than a dozen Ritz or Saltine crackers, finely crumbled

1 – Teaspoon salt

1 – Teaspoon fresh ground black pepper

About two cups of tomato juice.

1 – 7”x11” Pyrex glass, ovenproof casserole dish

1 – Oven, preheated to 350Ί

Cooking Instructions:

Mix everything except the tomato juice together in a glass bowl.  If you wet your hands first the mixture will not stick to your hands.  Shape the mixture into two equal loaves.  Place the loaves in the casserole dish and add enough tomato juice to fill the dish a half-inch from the top.  Place in a pre-heated 350 oven for one hour.  After one hour remove the dish from the oven, and carefully stir the tomato juice, and ladle several large spoons full over the top of the loaves.  Return to the oven for an additional thirty minutes.  Remove when cooking is complete and let stand for ten minutes.  Remove the meat loaves from the baking dish and slice into ½” slices.  Ladle some gravy over the meat loaves and serve.
